Cracked Chocolate Mushroom Muffin



I fell in love with these crispy buns because they remind me of mushrooms. I decided to make a more chocolatey version by adding chocolate chips.


Chocolate Mushroom Cake with Crackers


*Recipe for 10 buns*

*Swoet Hard Yeast*


30g sourdough starter

90g high protein flour

40g water

15g sugar

"Dough Ingredients*

210g high protein flour

20g sugar

4q salt

15g cocoa powder

115g milk

50g cream

40g melted chocolate

20g unsalted butter

Whole-fat yeast

"Topping Ingredients*

70g low protein flour

70g milk

70g condensed milk

Mix eggs until soft dough forms

Method

Make the Sweet hard yeast and use it when it has tripled in volume at 7-Bhr at approximately 27-28C.

+ Knead the eggs, butter and melted chocolate until the dough comes together and is firm.

+ Add the butter and melted chocolate. Make 2-3 batches and knead until the dough is completely combined and glassy.

Leave the dough to rise at 28C for Zhvs

Punch the dough and divide into 10 equal pieces

Roll out the dough and let it rest for 15 minutes

Roll out the dough and wrap it with chocolate balls.

+Leave it to rise for the final rise at 28C for 3-3.5 hours or until the dough has risen 1.5 times

+Squeeze and sprinkle cocoa powder on top

Bake at 170C for 20 minutes
