Cinnamon cake
RECIPE
100g Oat/buckwheat flour
40g Almond flour
- 20g Erythritol or other sweetener (date, banana, inulin or
other)
- 5 Eggs, yolks and whites separated
- 80g Milk
-1 Teaspoon vanilla
-1 Tablespoon cinnamon
1. Mix all ingredients except egg whites.
2. Beat egg whites until stiff and
fold into previous mixture.
3. Transfer mixture to baking paper on a baking tray
and bake at 180 C for 10-12 minutes.
4. While the cake is hot, roll to shape.
Filling:
- 300g Mascarpone
- 300g Cream
-20g Erythritol or other sweetener
1. Beat all ingredients until smooth and
spread over the cake
2. Roll the cake, pressing it well.
Topping:
Chop 100g of pure chocolate, put in a bowl and add 130g of hot cream, stir until melted and
spread over the cake. Finally, decorate to your liking, but preferably homemade crushed biscuits would be great.
