Ingredients:
1/2 cup (1 stick) softened unsalted butter
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/3 cup unsweetened cocoa powder
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup buttermilk
1/2 cup hot water
Ganache Topping:
1 cup semisweet chocolate chips
1/2 cup heavy cream
Optional Garnish: Fresh raspberries and powdered sugar
Instructions:
1️⃣ Preheat oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
2️⃣ In a large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, then stir in vanilla.
3️⃣ In a separate bowl, sift together flour, cocoa powder, baking powder, and salt. Slowly add to wet ingredients, alternating with buttermilk. Stir in hot water until combined.
4️⃣ Pour batter into prepared pan and bake for 50-60 minutes, until toothpick comes out clean. Let cool completely.
5️⃣ To make ganache, heat cream until just boiling. Pour over chocolate chips and let sit for 2 minutes before whisking until smooth.
6️⃣ Spread ganache over cooled cake, then garnish with fresh raspberries and powdered sugar.
